It was my friend's birthday recently and I decided to make her a batch of cookie sandwiches because who doesn't love getting cookies?
I went back and forth between which cookies and which filling I was going to use before I finally settled on basic snickerdoodles and nutella cloud icing from Sweetapolita's blog.
I had been reading Sweetapolita's blog and when she described the nutella frosting like a chocolate cloud I knew that I had to make it right away and try it for myself. Plus you can't go wrong with ingredients like nutella, chocolate, butter, and sugar.
The icing is light and buttery and chocolatey so I figured that it would go well with a sweet cookie like snickerdoodles. With cookie sandwiches you don't want both the cookies and the filling to be super sweet or it ends up being too sugary. It's good to find a balance with either a sweeter filling or a sweeter cookie.
The snickerdoodles turned out really tasty with soft white centers and chewy cinnamon edges.
Each one was topped with a dollop of the icing...
..which is when I realized that this icing was waay too soft and buttery to be in a cookie sandwich. Instead of sealing the cookie together it just wanted to squish out the sides and onto your fingers.
Oh well, as far as baking mishaps go this wasn't the worst one. There was a very easy solution: Just pull the cookies apart when eating them and then instead of a sandwich you get two cookies with a smear of icing on them. Still delicious!
I still have plans to make this icing again as well as the snickerdoodles, they just won't be packaged together into one treat.
In other (exciting!) news my first column for the Globe and Mail came out yesterday. On the front page of the paper there was a little teaser photo of half a cupcake..
..then on the front of the Life section there was a big photo introducing the column which is called "Icing on the Cake". I was pretty surprised to open the paper and find my face there, I had expected a big picture of the cupcakes!
Inside the paper was the actual article and recipe. A professional photographer Chris Bolin had come to my house beforehand and photographed myself and the cupcakes. It was a really fun experience and I couldn't get over how much equipment he owned!

Hoorah for birthday cookies. Nutella icing, oh my! One of the most thoughtful gifts I ever received was a box of cookies. She shaped the cookies into letters, so when I opened the lid, there was my name. I've never forgotten it.

Wow, congratulations on such a big article in the paper - how very neat! Now we all get to say we knew you before you got all rich and famous. ^_^
Also, those snickerdoodles + pillowy chocolate frosting look divine, even if they were a bit messy. Maybe next time you just dip the cookies right into the giant bowl. Or just be honest and put a spoon in the bowl itself. >.>
