These pretty sugar flowers are easy to make and they look so sweet on cakes, cookies, and cupcakes. Gum paste is easy to work with and you can make flowers as simple or as realistic as you want. These ones are very simple flowers that you can make large amounts of in a short amount of time. Plus it's pretty fun to play with the gum paste.
To get started you'll need :
1. A rolling pin
2. A thick piece of foam and a thin piece of foam
3. Flower shaped fondant/gum paste/ small cookie cutters
4. Gel food colouring (I use Wilton's)
5. Toothpicks
6. A stick with a smooth rounded edge ( a pencil that has a rounded eraser works too)
7. A stick with a dull pointed edge ( a dull pencil crayon works for this one)
8. A bit of butter or crisco
9. Gum paste! You can get this at most craft stores or places that carry lots of cake decorating supplies. I buy this pre-mixed gum paste. It lasts a really long time and takes away any hassle of having to get the right consistency.
Step One:
Take a piece of the gum paste (keeping the rest in a plastic bag or in plastic wrap) and knead it a bit until its easy to shape and feels like play-dough. If it is too sticky or too stiff work a tiny bit of butter or crisco into it.
Dip a toothpick into a gel colour and then into the ball of gumpaste. You can always add more colour as you go so start with a small amount and work up.
Step Two:
Knead the gum paste until the colour is uniform throughout.
Step Three:
Now you're ready to roll out the gum paste. Have some butter or crisco on hand to rub on the rolling pin if the gum paste starts to stick. I haven't had that problem with the pre-mixed gum paste, but if you're mixing your own sometimes things get a bit sticky.
Step Four:
Roll out the gum paste. I roll mine on a plastic mat, but it works just as well on the table. Gum paste can be rolled out very thinly to make impressive realistic flowers, but for these flowers the gum paste can be a little thicker.
Step Five:
With the flower shape stamp out some flowers.
Ta-dah! Don't forget to cover the extra after you take the flower shapes out so that they don't dry up. You're going to roll out the scraps to cut out more flowers so that no gum paste is wasted.
Step Six (optional):
Take the rounded end of the stick (or rounded pencil eraser) and on the thin piece of foam press straight down on each of the petals.
The result!
Step Seven:
On the thick piece of foam press the flower's center. This will curve up all the petals so that the flower is more flower-like. You can do this after step six OR skip step six and just press the center of the flower right away.
Shaped and ready to dry! I skipped step six for the flower on the right. Because these flowers are so small they dry quickly and hold their shape so you don't need to worry about drying them in forms. Once dry, they keep for months in tupperwear or glass containers. I always make a bunch at once because they always come in handy.
Try different flower shapes! Don't worry about pressing each petal, just press the center on the thick foam to make their petals curl up. Or if you want to make a different center here are two methods:
Use the stick with the dull point (or the pencil crayon) and push the center of the flower while it is on the thick piece of foam.
The result!
You'll need some small round sprinkles (called nonpariels), a glass of water, and a clean paint brush
Brush the center of each flower with a small amount of water..
..then press some of the sprinkles into the middle. Once the water drys the flower centers stay in place.. and look really cute.
You can make so many different flowers just by changing the colour of the gum paste, the shape, or the center of the flower. Even using different coloured sprinkles in the center of the flower changes how they look.
Enjoy!
Love these ! Everytime I see them I can't help but think of the little paper millinery flowers ( I love those too ) sweet tutorial : )

What a great post! I've been wanting to do something like these for a while for cupcakes. Thanks for the info. By the way can you store the flowers after you mak ethem?
Posted by: livingindomesticity | 05/05/2010 at 07:56 AM
Storing the flowers is easy, they keep well in a jar or in a ziplock bag. Since they dry solid it's like storing sprinkles.. they keep for a very long time

Very cool...I always wondered how beautiful blooms like that were created! I'm happy to find out that they're really quite simple to make...and they make such a huge impact! I will have to try this out some afternoon.

Is so easy to follow. great! I am trying , but after i attach my flower gum paste to my cupcakes.. i store in a air tight container and the next morning my gum paste look sticky wet and some melted. Is there any thing wrong<
Posted by: Christine | 05/19/2010 at 12:28 AM
Christine : You aren't doing anything wrong. The gumpaste flowers should only be put on the cupcakes on the day that they are served. The flowers keep well by themselves (not on cupcakes) in a container like sprinkles would. Since they are made mostly of sugar they get a bit soft when they sit on icing overnight.
