Chunks of apples are baked in a cinammon batter sweetened with honey and then topped with a oat and pecan crumble. The apples and honey flavor the muffin without making too sweet or too cakey.
Perfect for breakfast or brunch
Aren't these muffin papers cute? My sister brought them back from New York for me. I wasn't going to attempt to decorate these muffins but the pretty papers dress them up a little bit.
These are easy peasy no-fuss muffins that seem special with their crumble topping
1 tbsp. cinnamon
2 peeled, cored, sliced apples (my apples were tiny so I used 4.5)
1. combine each flour, baking soda, baking powder, salt, and cinnamon.
2. In another bowl mix egg, honey, yogurt, apple cider and butter.
3. Pour liquid mixture into the dry ingredients and mix well. Gently fold in the sliced apples.
1/4 cup of Whole Wheat Flour
1/2 cup oats
1/4 cup pecans
4 tablespoon cold butter
3 tablespoons brown sugar
In a food processor blend all ingredients until it resembles a crumbly mixture. Sprinkle mixture on top of muffins and bake for 25 minutes at 375.
