Sweet lime pie with mangos and strawberries for one of the most important persons in my life.
I'm posting this well after mother's day.. but it doesn't need to be mother's day to make this tasty pie or to give something sweet to your mom. Plus it's simple to make and fun to decorate with different fruit.
I don't remember exactly where this recipe came from, I copied it from a clipping that my mom had given me months and months ago. Since then I've used this graham cracker pie crust for many a delicious pie because its fast, easy, and so so tasty with creamy pies.
The first step is to make the crust. Simple! Its just graham cracker crumbs...
..Mixed with a few tablespoons of sugar and some melted butter. Then its pressed and patted down into a pie plate and baked for 15 minutes at 375. It smells amazing while its baking and it's pretty much fool proof.
While the crust was cooling I made the filling for the pie. You need a 1/2 cup of fresh lime juice as well as 2 tsp of lime zest. Right now the limes available at my store are really dry and juice-less, I had to squeeze a lot of them to get the juice up to the 1/2 cup mark. In the end I added a squeeze of lemon just so I wouldn't have to run to the store to get more limes.
The lime juice and zest gets whisked together with two cans of sweetened condensed milk and two eggs then poured into the cooled pie crust and baked at 325F for 20 minutes.
While the pie was cooling in the fridge I made the fruit decorations out of mango for it. I wanted the pie to look special seeing as it was for my mom, otherwise known as the maker of the world's best caesar salad that my sister requests in writing before she visits from Montreal.
I wanted to try using my fondant cutters and tiny cookie cutters on mango slices.. and it worked perfectly. The fruit (when ripe) is easy to cut little shapes out of and in no time at all I had letters and hearts to decorate with.
Yum!!! The pie is tart and creamy and sweet all at the same time.
I didn't manage to get a picture of a slice of the pie because everyone (including myself) was too busy eating it. I'll be making it again soon because it goes perfectly with all the summer food and bbqing that is just around the corner.

Sweet Lime Pie with Mango
2 large eggs
2 cans (300ml/10 ounce) sweetened condensed milk
2 tsp finely grated lime zest
1/2 cup fresh squeezed lime juice
1 graham cracker pie crust (recipe to follow)
1 container whipping cream
fruit for decoration
1. Preheat oven to 325F
2. Whisk eggs then whisk in sweetened condensed milk, lime zest, lime juice and pour into pie crust
3. Bake for 20 minutes
4. Cool to room temp and then chill for at least an hour.
5. Decorate with fruit and whipped cream
Graham Cracker Pie Crust
1 3/4 cups graham crumbs
3 tbsp sugar
1/3 cup melted butter
1. Preheat oven to 375F
2. Mix all ingredients in a bowl
3. Press into a pie plate (I've used it on 10" & 9")
4. Bake for 15 minutes and then cool before using. I often start checking at ten minutes to make sure that the edges don't get burnt.
